Crunchy Red Coleslaw

A variation on the traditional slaw only with a bit of a punch. Never underestimate the healthy power of a coleslaw!

Preparation time: 15 minutes   Quantity: serves 6 as a side  

Ingredients

1 small red cabbage – shredded
1 white or red onion- thinly sliced
1 large carrot - finely stripped
1 large fresh red chilli - finely stripped (op)
2 tablespoons mayonnaise
3 tablespoons Greek yogurt
1/2 fresh lemon juice
5-6 twists freshly ground black pepper
A touch of salt just before you service

Method

  • Simply toss all the vegetables together and bind with the mayo and yogurt
  • Season
  • Salt brings out he water in the salad - so only salt if your going to serve soon-ish
