Asparagus and Pea Frittata

Try any assortment of fresh vegetables, meat or fish to make this Italian omelette

Preparation time: 5 - 10 minutes   Quantity: Serves one   Cooking time: 10 - 15 minutes

Ingredients

1 tablespoon olive oil
1/2 red onion - sliced
1 clove garlic - crushed
3 asparagus - trimmed and cut in fours
2 large eggs - lightly beaten
1 tablespoons milk
small handfull / 20g peas - fresh or defrosted
1 oz / 30g any cheese - grated

Method

  • In a omelette pan or small frying pan, heat up the oil
  • Add the onions, garlic and asparagus
  • Sauté till soft but with out colour
  • Add the eggs and milk– stir round gently on high for a few minutes then turn down the heat
  • Sprinkle on the peas and cheese
  • Either grill for a few minutes till just cooked or place in the oven for 4-5 minutes on high till set
  • Cool slightly before serving – can be eaten chilled
