Pad Thai - Thai Noodles with Prawns

Quick food, clean taste and totally satisfying.
Try omitting the prawns for tofu or chicken.

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: 10-15 minutes

Ingredients

300g rice noodles
1 tablespoon sunflower/vegetable oil
5-6 spring onions- sliced
1 red chili -finely diced (remove seeds)
2 garlic clove -crushed
200-300g fresh raw prawns
2 small eggs
3 tablespoons sweet Thai chili sauce
2 tablespoons fish sauce -Nam plah
1 fresh lime - juiced
603/ 2 oz peanuts -crushed
1/4 bunch fresh coriander - chopped

Method

  • Cover the rice noodles with boiling water and leave to soak for a couple of minutes -drain
  • Heat the oil in a wok or frying pan, not too hot
  • Fry of the spring onions, followed by the chili than the garlic cooking in total for a minute
  • Add the prawns cooking each side till pink (a minute or so) then turning and cooking the other side
  • Pour in the beaten eggs, stir to scramble
  • Add the noodles and stir everything together
  • Spoon on the sauces and lime, stir and serve
  • Garnish with the crushed peanuts and coriander
