Invented by an Italian chef in Mexico, later to become popular in America-followed by global acknowledgement.
I often use Gem lettuce as there smaller, cheaper and easier to store for smaller amounts.

Ingredients

1 cos/romaine lettuce -washed croutons
1 tablespoon parmesan cheese flakes(or grated)
2 tablespoons fresh croutons
5-6 fresh white anchovies - optional
ceasar dressing (see CookeryClubs recipe)

Method

  • This is simply washed cos leaves torn into smaller pieces, croutons, Parmesan cheese flakes and anchovies dressed with a ceasar dressing
  • To make fresh croutons, simply de-crust stale bread, cut in to rough cubes-drizzle well with olive oil, season a little and toss
  • Then bake in a medium hot oven till golden and crisp
  • Cool and store in an air tight lid for several days
