Chinese Lemon Chicken
If your having friends round, try cooking an assortment of Chinese foods and serve as a banquet. Try CookeryClubs Chinese starters, followed by crispy duck, followed by several main courses and a rice dish, followed by toffee bananas - I'm there!
Preparation time: 20 minutes Quantity: Serves 5 - 6 Cooking time: 10 - 15 minutes
Ingredients
Lemon Sauce -
2 fresh lemons - zested
100 ml fresh lemon juice
2 tablespoons cornflour
3 tablespoons caster sugar
1 inch / 2 cm peeled grated ginger
400 ml chicken stock or water and 1/2 chicken stock cube
Chicken Bites -
3 large chicken breasts and fillets or 4 small
75g / 3 oz cornflour
1 egg white - large or medium
oil for deep frying
Garnish - optional
3 spring onions - chopped
handful of beanshoots
1 tablespoon chopped coriander
Method
To make the sauce-
- Add all the ingredients to a saucepan and bring to the boil
- Stir continuously and simmer till thickened and smooth
- Set aside till needed
- Meanwhile skin and cut the chicken in to finger sized strips
- Toss in the cornflour and shake of the excess
- Whisk the egg white slightly to break it up a little
- Dip the chicken in to the egg till coated
- Shake of excess and gently drop each piece in to hot oil / a deep fat fryer
- Cook till golden brown and firm
- Drain
- Serve either coated in the sauce or serve the sauce separately
- Garnish the chicken with the onion, shoots and herb
