Wholemeal Nutty Soft Baked Biscuits
These biscuits are good because they are low in sugar and made with wholemeal flour, which is untreated and contains dietary fibre. Plus you can boost the goodness with a mixture of nuts, seeds and dried fruit
Preparation time: 15 minutes Quantity: Makes 8 biscuits Cooking time: 12 - 15 minutes
Ingredients
3 oz/ 75g soft butter
3 oz/ 75g sugar
1 egg
6 oz/ 175g self raising wholemeal flour
½ teaspoon vanilla (optional)
1 - 2 tablespoon milk
2 oz/ 60g of your favourite crushed nuts
(or add a mixture of nuts, seeds and/ or dried chopped fruit)
Method
- Cream butter and sugar
- Add eggs slowly
- Fold in all else
- Roll in to a fat sausage shape and wrap in greaseproof
- Rest in fridge for a minimum of 20 minutes
- When needed cut of slices
- Cook on a greased tray in a preheated oven 180c/ gas 4 for 12 -15 minutes
