A rustic lump of yumminess, serve with a spoon of jam or marmalade.

Ingredients

175g / 7 oz self raising flour - sifted
75g / 3 oz butter - softened
75g / 3 oz any sugar
1/2 teaspoon vanilla essence (optional)
1 egg - large
1/2 tablespoon milk
1 tablespoon raisins
1 tablespoon sultanas
6 - 8 glace cherries -chopped (optional)
pinch mixed spice

Method

  • Rub the butter in to the sifted flour by hand
  • Add the sugar, mix until the mix resembles bread crumbs
  • Mix in everything else to form a slightly sticky dough (if too dry add a touch more milk or an extra egg yolk)
  • Place tablespoons on to a greased tray

leaving space to grow and spread a little

  • Bake in a preheated oven gas 7 /200*c for 12 - 14 minutes
  • Serve hot, warm or cold
