Oaty Date Slice

A healthier slice of oats, seeds and dates cooked with minimum butter and sugar.

Preparation time: 20 minutes   Quantity: Makes 12   Cooking time: 40 minutes

Ingredients

200g / 8 oz dried dates - chopped
3 tablespoons boiling water
150g / 6 oz butter
3 tablespoons golden syrup
200g / 8 oz plain flour or wholemeal
75g / 3 oz light brown sugar
75g / 3 oz porridge oats
1 tablespoon sunflower seeds
1 tablespoon bran (optional)
1 tablespoon pumpkin seeds

Method

  • Cover the dates with the boiling water and leave to soften and seep
  • Melt the butter and syrup together in a small pan
  • Meanwhile mix the flour, seeds, oats and sugar together in a bowl
  • Pour over the butter mix and stir together
  • Spoon half the mix in to the bottom of a 6 - 8 inch greased tin
  • Spoon on the dates, spreading evenly
  • Spoon over the rest of the pastry mix
  • Bake in a preheated oven gas 3 / 150*c for 40 minutes
  • Score in to 12 slices while still hot
  • Cool
