Muesli Wholemeal Biscuits

Kind of healthy because they are low in sugar and butter, compared to other biscuits and also made with Wholemeal flour - a good source of fiber. Try adding other dried fruits like chopped prunes, dates, apricots, apples etc

Preparation time: 10 - 15 minutes   Quantity: Makes 8 biscuits   Cooking time: 15 - 20 minutes

Ingredients

75g/ 3 oz soft butter
60g/ 2&½ oz sugar
1 beaten egg
175g/ 6 oz self raising Wholemeal Flour
½ teaspoon vanilla essence
1 –2 tablespoons milk
50g/ 2 oz Muesli mix
30g/ 1 oz sultanas or raisins

Method

  • Cream together the butter and sugar
  • Add egg
  • Fold in flour
  • Add all other ingredients
  • Roll the same way as for cookies (roll like a thick sausage in some cling film - so there ready to cut)
  • Refrigerate for 10 or so minutes to firm up
  • Slice in to cookies when needed
  • Bake on a greased tray in a preheated oven 180c / gas 4 for 15 – 20 minutes or until firm and golden
