Chocolate Brownie Muffins
Preparation time: 20 minutes Quantity: Makes 10 - 12 medium or 6 - 8 large Cooking time: 20 minutes
Ingredients
300g/ 12 oz self raising flour
40g/1 &1/2 oz cocoa
80g 3 oz caster sugar
60g/ 2 oz butter
100g /4 oz chocolate chips
75g/ 3 oz chopped nuts
1 medium egg
180 ml any milk
125 ml sour cream or Greek yogurt
125 ml Nutella or chocolate spread
Method
- Grease muffin tins- or make ready cases
- Sift flour, rub in fat
- Stir in sugar, buttermilk and the egg
- Add all else
- Spoon 1/2 the mix in to the cases
- Divide the chocolate spread in to the middle of each 1/2 filled muffin
- Spoon in the rest of the mix
- Bake medium oven – 20 minutes
