Millionaires Shortbread's

Homemade Millionaires shortbread is by far superior to the shop bought stuff.
Super fun for the children to make, try white chocolate topping.

Preparation time: 20-30 minutes   Quantity: Serves 12 - 14   Cooking time: 20 minutes

Ingredients

Base -
250g/ 10o z butter -softened
300g/ 12 oz plain flour- sieved
125g/ 5 oz caster sugar

Toffee middle -
250g/ 10 oz butter- softened
250g/ 10 oz light brown sugar
4 tablespoons golden syrup
1 can/400g condensed milk

Topping -
2 x 100g/200g dark or milk chocolate

Method

  • Mix the 1st butter, flour and sugar together, mixing till it forms a dough
  • Roll out on a floured surface and thickly line a greased liped/high sided tray
  • Prick all over with a fork
  • Bake for 20 minutes in a preset oven on gas 4/180*c
  • Cool slightly
  • Meanwhile bring the 2nd butter, brown sugar, syrup and condensed milk -to the boil.

simmer for 10-15 minutes- till browned, sticky and toffee-ish

  • Pour on to the cooked biscuit base
  • Leave to set in the fridge
  • Chop or grate the chocolate
  • Melt in the microwave in a suitable bowl on short bursts, till melted
  • Pour over the Toffee filling and swirl in shapes as it starts to melt
  • Leave in the fridge to set
