Ginger Lemonade

A zesty, zingy squash.

Preparation time: 10 minutes plus cooling time   Quantity: Enough for 4   Cooking time: 5 minutes

Ingredients

6 cm or so fresh ginger
4 tablespoons water
6 tablespoons sugar
6 lemons - zest and juice

Method

  • Slice the ginger in to 2 mm slices
  • In a pan add the ginger, zest and sugar
  • Bring to the boil, simmer for 1-2 minutes
  • Leave to infuse and cool
  • Squeeze in the lemon juice
  • Serve- topped up with still or sparkling water
