Peanut and Corn Patties

For an original party food idea serve in brown paper cones with a slash of Thai chilli sauce

Preparation time: 10 - 15 minutes   Quantity: Makes 8 - 16   Cooking time: 10 minutes

Ingredients

2 fresh corn on the cob
120g / 4 oz peanuts - roasted
4 spring onions - sliced
2 cm grated fresh ginger
1 clove garlic - sliced
1 teaspoon ground cumin
1/4 teaspoon ground chilli (optional)
1 whole egg
2 tablespoons plain or rice flour
seasoning
oil to fry

Method

  • Remove the corn from the cob
  • Process the corn, nuts, onions, ginger, garlic and spice
  • Blend till incorporated but a little textured/ crunchy looking
  • Stir in the egg, the flour and season
  • Heat up 1 cm of oil in a frying pan or wok
  • Fry of spoonfuls of mix (a teaspoon for small ones or a heaped tablespoon for larger ones) flattened a little
  • Cooking till golden on both sides
  • Serve with a chilli or sate dip
