Linguini with Rocket Pesto Sauce - Pasta
Linguini is a thinner tagliatelli which is cut in to long strips, but basically any type of pasta will do for this dish and any colour white, Wholemeal or Verde. For a creamy version add 1 tablespoon of cream fraiche to the pesto.
Preparation time: 10 - 15 minutes Quantity: Serves 4 Cooking time: 8 - 10 minutes
Ingredients
350g / 12 oz linguini pasta
Rocket Pesto -
4 tablespoons olive oil
1 lemon - juice
60g fresh rocket
60g pinenuts - lightly toasted
60g grated parmesan - grated
2 cloves garlic - crushed
Method
- Cook the pasta in a big pan of boiling salted water for a minute less than the instructions on the back of the packet
- Meanwhile whizz / blend half the parmesan and the rest of the ingredients together
- When the pasta is cooked al dente (to the bite - just under cooked)
- Drain
- Place back in the pan and coat with the pesto
- Stir well and serve
- Sprinkled with the rest of the parmesan
