Eggs Baked in Tomato Sauce with coriander
Use CookeryClubs easy tomato sauce or use an alternative (no - not ketchup). Serve with a good chunk of bread.
Preparation time: 10 minutes Quantity: Serves 2 - 4 Cooking time: 15 - 30 minutes
Ingredients
Tomato Sauce -
1 tin plum tomatoes
1 tin water
1 chopped onion
2 cloves garlic
1 stick celery
1/2 chopped red chilli (optional)
seasoning
2 tablespoons tomato puree
4 large eggs
black pepper
1 tablespoon coriander - chopped
Method
- Place all ingredients for the tomato sauce in a big pan and simmer for 30 –40 minutes
- Liquidize / blend till smooth
- Spoon 1/2 - 2/3 of the mix in an oven proof dish
- Crack 4 eggs on the top
- Bake in a preheated oven gas 6 /200*c for 15 -30 minutes until the eggs are how you like them
- Grind on some pepper and sprinkle with coriander
