Mushrooms, Sage and New Potato Kebabs

Great for the barbie with charcoaled meats or as a Vegetarian alternative served with some vegetables cooked in foil on the coal -embers and a good yogurt dip - try CookeryClubs Tziki.

Preparation time: 20 minutes or so   Quantity: Makes 4   Cooking time: 20 - 30 minutes

Ingredients

14-16 oz / 450g new potatoes (preferably Jersey or similar)
6-8 oz / 250g button Mushrooms
16 large sage leaves
1 teaspoon cumin seeds - lightly crushed
1 teaspoon paprika
1 teaspoon sesame seeds
salt and pepper
1 - 2 teaspoons any mustard
squeeze of lemon
oil to grease

8 soaked wooden skewers

Method

  • Boil or steam the new potatoes till just cooked
  • Blanch the mushrooms by boiling or steaming for 2 - 3 minutes
  • Pick and wash a hand full of large sage leaves
  • Mix the cumin seeds, paprika, sesame seeds, salt and pepper and 3 chopped sage leaves together in a bowl
  • Wrap the sage leaves around alternative potatoes and skewer on to pre-soaked bamboo sticks - use 1 or 2 potatoes then 1 or 2 mushrooms on each stick
  • Brush the skewers with a little mustard watered down with a squeeze of lemon and roll in the spice mix
  • Bake or grill on a well-oiled tray for 10-15 minutes
