Mexican Ranch Eggs - Huevos Rancheros

Use Cookeryclubs recipe for corn tortillas, and re fried beans for this recipe or for convenience use shop bought flour tortillas and make up a bean salad by mixing tinned drained beans with chopped peppers, onions and avocado dressed with olive oil and fresh lime juice and season

Preparation time: 20 minutes   Quantity: Serves 2   Cooking time: 10 minutes or so

Ingredients

Salsa -
2 ripe tomato
1/2 avocado
1/2 red onion
1/4 fresh chilli
1 clove garlic (optional)
1 tablespoon fresh coriander
1 tablespoon olive oil
1/4 fresh lime juice
seasoning

3-4 tablespoons oil
2 corn tortillas -flat
4 tablespoons re fried beans (optional)
30g / 1 oz grated cheese
2 eggs

Method

  • Make the salsa by finely chopping the tomato, avocado, onion and chilli
  • Crush the garlic and add
  • Add the olive oil and lime juice,
  • Season to taste and mix well
  • Heat half of the oil and fry of the tortillas one at a time cooking till golden on both sides, adding more oil when needed
  • Divide and spoon the re fried beans (optional) on to the crisp tortillas
  • Spoon over the salsa
  • Meanwhile fry the eggs
  • Top on to the tortillas
  • Sprinkle with the cheese
  • Lightly grill and melt the cheese under a hot grill
  • Serve with a dollop of sour cream or yogurt (optional)
