Falafel / Chick Pea Fritters
Falafel is traditionally served as a filling pitta bread but Falafel balls can be eaten as a snack or as part of a mezze. During Ramadan they are often eaten as part of an iftar this is the meal which breaks the daily fast after sunset.
Preparation time: 20-30 minutes Quantity: Serves 4 Cooking time: 10-12 minutes
Ingredients
240g/ 8 oz tinned chick peas
1 teaspoon cumin
½ teaspoon bicarbonate of soda
2 cloves crushed garlic
½ finely diced onion
1 tablespoon chopped parsley
1 tablespoon chopped coriander
30g/ 1 oz stale bread crumbs
1 veggie egg mix or leave out
salt and pepper to taste
Method
- Process chick peas to a pulp and place in a large bowl
- Mix the rest of the ingredients together
- Mould in to squashed rounds about 12 in number. If too dry add a little oil, if too wet add a few more crumbs
- Deep fry until golden
- Serve in pita breads with salad and hummus
