Chargrilled Yellow Pepper, Parsley & Halloumi Parcels

Mediterranean Vegetables are just so Hunky, I want to say Meaty- but it doesn’t seem right, somehow. These are the perfect Vegetarian B.B.Q food, try stuffing with ricotta instead for an Italian twist.

Preparation time: 20 minutes   Quantity: Serves 4   Cooking time: 20 minutes

Ingredients

4 yellow peppers -large
150g/6oz Halloumi cheese
8 sunblushed tomatoes
2 tablespoons chopped flat parsley
2 tablespoons olive oil
seasoning

Method

  • Quarter the peppers, de-seed and trim of any untidy middle pieces
  • Grill brushed with olive oil and salt.

when browned and blistered, cool slightly before peeling away skin

  • Slice the Halloumi in to 8
  • Lay on top of 8 peppers, with a tomato on each one, divide the parley between each one, season and lay the remaining pepper on top. Brush with olive oil
  • Chargrill or B.B.Q till the cheese starts to soften and the peppers char
