Baked Vegetables in a White Cheese Sauce
A great dish to use up excess vegetables, serve as a side dish or as a vegetarian main course, alternatively make up individual dishes for a starter.
Preparation time: 15 minutes Quantity: Serves 3 - 4 Cooking time: 20 minutes
Ingredients
Vegetable filling -
Assorted vegetables either mixed or singly try leeks, broccoli, onions or cauliflower (approx. 1& 1/2 lb.)
All in one white sauce –
300 ml / 1/2 pint milk
30g / 1 oz butter
30g / 1 oz plain flour
(optional) tip tsp mustard
(optional) 1 clove garlic
(optional) 1/2 diced onion seasoning
pinch ground nutmeg
Topping -
30g / 1 oz grated cheese
Tip - cauliflower and broccoli go well together or use left over mixed cooked vegetables
Method
- Pre cook - boil or steam the peeled, trimmed vegetables till just cooked
- Drain and set aside till ready
To make the white sauce -
- Put all ingredients in a pan and heat gently, stirring occasionally till thickened, approx. 10 minutes
- Liquidize or pass through
a sieve
- Season well
- Stir in the vegetables
- Spoon in to an ovenproof dish
- Sprinkle on the grated cheese
- Bake in a preheated oven until browned approx. 15-20 minutes
