Chicken Fajitas

Replace the chicken for strips of turkey, pork or steak like trimmed rump or sirloin.

Preparation time: 5 - 10 minutes   Quantity: Serves 4   Cooking time: 10 - 12 minutes

Ingredients

1 large chicken breast or 3 thighs (boned and skinned)
1 onion - sliced
1 red pepper - sliced
1 tablespoon olive oil
1/4 red chilli - finely sliced (optional)
1 clove garlic – crushed
pinch paprika
pinch ground cumin
1/2 fresh lime juice
1 tablespoon coriander - chopped
seasoning

2 - 3 floured tortillas each (8 - 12)
Salsa, sour cream and / or guacamole

Method

  • Slice the chicken, the onion and the pepper
  • Heat the oil in a frying pan
  • Stir-fry the chicken till sealed/ light brown all around
  • Add the onions and cook without colour till soft on a lower flame
  • Add the peppers, spice, chilli and garlic
  • Cook till semi-soft for 3-5 minutes and the chicken is firm and cooked
  • Squeeze on the lime, add the coriander and season
  • Serve in a sizzling fajita or in a separate dish, with a plate of tortillas, salsa, sour cream and guacamole
