Ceviche - Tapas
Here’s a self cooking dish, the fish is marinated by the acid in the lemons and limes so in just oven an hour it’s ready to eat and tasting fresh and zingy. Serve as a starter or as part of a Mexican feast.
Preparation time: 10 minutes -marinating time Quantity: Serves 4 - 6
Ingredients
450 g/ 1lb white fish - skinned
1 large onion - small diced
2 tomatoes - de-seeded and small diced
2 fresh red chillis - finely sliced
1 tablespoon fresh coriander -chopped
2 fresh limes - juiced
2 fresh lemon - juiced
3 tablespoons light olive oil
1 avocado - small diced (optional)
few twists black pepper
Method
- Cut the fish in to small finger length sizes/ strips
- Place in a bowl and mix all the ingredients together
- Mix well
- Leave to marinate for about an hour or so or leave up to but no more than 12 hours before you serve
