Corn Tortillas

Masa Harina is ground corn used to make corn tortilla. These can be used to stuff in stead of flour tortillas for burritos. Cut in to triangle 4 inch pieces and deep fried for corn tacos or fried whole and filled with fajita

Preparation time: 20 minutes   Quantity: Makes approximately 12   Cooking time: 12-24 minutes

Ingredients

300g / 10 oz masa harina
250-350 ml cold water

Method

  • By hand mix the water in to the masa harina in a large bowl
  • Mix till you form a soft dough ball, but not sticky -if too wet add more masa harina if too dry add more water
  • Knead the dough for 5-6 minutes
  • Divide in to 12 balls
  • Cover with a damp tea towel while you
  • Roll out each one in a little flour - till approx. 15 cm wide (or use a tortilla press)
  • Meanwhile heat up a griddle, frying pan or flat stove top
  • Cook each one (with no oil) for about a minute or so on each side, they will change colour, curl up at the edges and bubble slightly
