Re-Fried Beans - Frijoles Refritos

I’ve said to use pinto beans but you can use any beans (no -not baked beans) kidney work well, I always have a selection of tinned beans and tomatoes in the cupboard so can make this easy recipe quickly. Serve as a side dish or stuffed in to tortillas.

Preparation time: 10- 15 minutes   Quantity: Serves 2 - 3   Cooking time: 30 minutes

Ingredients

200-150g/ 8-10 oz pinto beans (soaked overnight and cooked till soft or tinned and drained)
1 tablespoon oil
1 onion- finely diced
1 clove garlic- crushed
1/2 red chilli - finely diced
1/2 teaspoon ground cumin
pinch cayenne pepper (optional)
1 tin plum tomatoes - chopped
2 tablespoon red wine, water or stock
seasoning
2 tablespoons tomato puree
1 tablespoon fresh coriander -chopped
75g / 3 oz grated cheese

Method

  • Heat up the oil
  • Fry of the onions, till soft without colour
  • Add the garlic, chilli , cayenne and cumin
  • Cook out for a minute
  • Add the tomatoes, red wine and beans
  • Simmer for 6-8 minutes
  • Taste to season
  • Stir in the puree and coriander
  • Mash half the mix so half is mashed and half are still whole
  • Pour in to an ovenproof dish
  • Sprinkle on the grated cheese
  • Bake in a preheated oven gas 6/200*c for 20 minutes or until the cheese is melted and golden
  • Serve in the dish
