Mexican Shredded Pork
Serve shredded pork instead of chilli con carne stuffed in to flour tortillas or corn tacos with a side pot of sour cream and chilli salsa and a few sweet potato wedges.
Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 20 minutes
Ingredients
2 tablespoons vegetable oil
300g / 12 oz pork fillet -thin stripped
2 onion - sliced
2 cloves garlic
2 teaspoon paprika
1 teaspoon ground cumin
1 tin plum tomatoes - chopped plus juice
1/2 glass red wine (30 ml)
4 spring onions -finely shredded
2 tablespoons flat parsley -chopped
1 teaspoon tomato puree

Method
- Heat the oil
- Fry the pork till sealed
- Add the onions cook without colour
- Add the garlic , paprika and cumin cooking for a few seconds to release the flavour
- Add everything else
- Cook for 15 - 20 minutes on a slow simmer until the pork is tender and the sauce has thickened
- Taste and season
