This goes really well with chicken or fish or as a dip with Tacos, or pan fry between two layers of floured tortillas (to make a Quastilla)

Ingredients

2 small diced plum tomatoes
1 small diced red onion
½ diced chilli
1 tablespoon of fresh flat leaf parsley
1 tablespoon tomato puree
1 tablespoon virgin olive oil
salt and pepper

Method

  • Mix all the ingredients together with the olive oil and season to taste
