Quesadillas
Preparation time: 5-10 minutes Quantity: Makes1 each Cooking time: 5-10 minutes
Ingredients
2 small soft floured tortillas per person.
Filling of choice - to include cheese
Oil for cooking
Try -tuna, spring onion and cheddar
or cooked chicken, mango chutney, coriander and cheddar
or pinto beans, gruyere, chillies, tomato and avocado
or smoked duck,pineapple, hoi sin sauce and spinach leaf
Method
- Top a tortilla with your choice of filling, add a little sauce, chutney or yogurt
- Sprinkle on some grated cheese
- Lightly oil a frying pan- panfry the tortilla for 2-3 minutes on each side. (to a nice golden brown- with the cheese melting and the filling warmed)
- Cook one at a time, keep warm in the oven or covered with tin foil, cut in to wedges and serve with a dip
