Marinated Adorba Pork

A succulent tasty piece of meat, great served with yellow or dirty rice (go to the recipe search) and one of our sweet potato dishes.

Preparation time: 15 minutes + marinating time   Quantity: Serves 10 - 12   Cooking time: 2 hours

Ingredients

Marinade -
3 limes - roughly diced whole
1 level teaspoon ground cumin
1/2 teaspoon ground black pepper
1/4 teaspoon salt
3 tablespoons / 1 bunch fresh thyme - chopped
1 clove garlic - optional
60 ml / 4 tablespoons olive oil

Joint -
choose either
pork shoulder - bone removed and any strings
or
Leg of pork - boned and untied (as above)

Method

To make the marinade

  • In a processor or pestle and mortar, blend everything together to form a soft paste
  • Remove any / the thick layer of fat from the joint - but leaving a thin layer
  • Rub the marinade in to the pork joint and leave to marinade in the fridge (covered) for 12 - 48 hours
  • Place on a tray or preferably on a wire rack above a tray or on a low B.B.Q (low embers or low in a hooded gas one)
  • Roast in a preheated oven gas 8 / 230*c / 450*f - for 30 minutes
  • Turn the joint over
  • Then turn the oven down to gas 6 / 1200*c / 375*f and cook for a further 1 & 1/4 - 1 & 1/2 hours or until cooked
  • Rest for 20 minutes before serving
