Indonesian Fried Tofu

A lightly spiced Tofu fritter serve with one of CookeryClubs dips. This batter works with most vegetables, celery works well.

Preparation time: 5 - 10 minutes   Quantity: Serves 2 main or 4 starters   Cooking time: 4 - 8 minutes

Ingredients

60g/ 2 oz plain flour
3 crushed cardamon pods
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
1 clove garlic - crushed
cold water to mix
1 block/ 375g firm tofu
oil to fry

Method

  • Make the batter by whisking the flour and spices with enough water to form a thick batter (the consistency of double cream)
  • Cut the drained tofu in to chunky chip sizes
  • Meanwhile heat the oil in a fryer or wok
  • Dip the tofu in to the batter, coat well and shake of excess
  • Fry till golden all over
  • Drain on kitchen paper
  • Serve with a coconut chutney or yogurt dip
