Tomato and Olive Salsa

This goes really well with simple grilled meats or as a dip with Tacos or pan fry between two layers of floured tortillas (to make a Quastilla)

Preparation time: 10 minutes   Quantity: Serves 2- 4   Cooking time: no cooking required

Ingredients

3 plum tomatoes - diced (skinned -op)
1 red onion - finely diced
1 clove garlic - crushed
6 - 8 black olives - chopped
1 tablespoon of fresh flat leaf parsley
1/2 tablespoons chives - chopped
2 tablespoon virgin olive oil
salt and pepper

Method

  • Mix all the ingredients together with the olive oil and season to taste
