Cous Cous / Cous Cous Salad

Tabboulah and cous cous done this way are very similar and you would only serve one or the other with your main or as a salad – choose your best
Alternatively you can serve just the cous cous hot with steamed mixed vegetables stirred together with stock and chickpeas topped with fresh coriander.

Preparation time: 10 - 15 minutes   Quantity: Serves 2 as a main or 4 as a side dish   Cooking time: 15 minutes

Ingredients

100g/ 4 oz cous cous
2 inches finely diced cucumber
1 juiced lemon
4 tablespoon olive oil
1 bunch roughly chopped parsley
(optional)
4 chopped spring onions
2 finely diced tomatoes (skinned optional)

Method

  • Place cous cous in a large bowl and pour on boiling water stirring in until absorbed.
  • Leave to stand for 15 mins stirring occasionally
  • When cool add all the ingredients in and mix
