Tabbouleh / Parsley, Mint and Bulgur Wheat Salad

This Middle Eastern salad is so colourful and perfect for a summers day, this is a lovely recipe to use up your home grown mint!

Preparation time: 10 minutes   Quantity: Serves 2 main or 4 as a side dish   Cooking time: 15 minutes

Ingredients

120g/ 4 oz cracked wheat
2 juiced lemons
75 ml/ 3 fl oz olive oil
180g/ 6 oz large bunch flat parsley rough chopped
60g/ 2 oz mint chopped
2 finely chopped spring onions
1 finely diced tomato

Method

  • Place cracked wheat in a large bowl and pour over boiling water, until just covered. but not soaking
  • Leave to stand for 15 mins
  • When cool add lemons,olive oil,parsley, mint and spring onions
  • Serve on a platter garnished with diced tomatoes
