These are surprisingly easy to make and incredibly cheap. Spice them up with fresh chilli or a little chilli powder and ground cumin, colour them with a little turmeric and serve with a Riata and mango chutney.

Ingredients

2 sliced medium onions
lemon juice
any spice (optional)
175g/ 6 oz chickpea flour/ garam flour
salt and pepper
water
Try -1/2 teaspoon chilli, ground cumin and turmeric

Method

  • Place onions in a bowl, sprinkle with lemon juice, slightly salted and seasoned with spice leave for a couple of hours
  • Make a thick batter by whisking water in to chickpea flour or garam flour and season.
  • Mix in the softened onion slices until well coated
  • Deep fry spoonfuls in hot oil; turning till both sides turn golden
