Roasted Mediterranean Vegetables

A good all-rounder, serve as a side dish as a vegetarian main, as a starter with a slice of grilled hallumi cheese or cold stuffed in to a sandwich with hummus.

Preparation time: 15 minutes   Quantity: Serves 4   Cooking time: 30 - 45 minutes

Ingredients

Large dice, approx. all the same size
1 aubergine
½ each mixed peppers
2-3 courgettes
2 red onions
3 - 4 whole peeled garlic cloves
3 tablespoons olive oil
seasoning

Method

  • Dice all the prepared vegetables
  • Drizzle liberally with olive oil and a touch of thyme
  • Roast in a hot oven for 3/4 hour or grill for 30 - 40 minutes tossing occasionally
