Spiced Aubergine Stir-Fry

Preparation time: 10-15 minutes   Quantity: Serves 4   Cooking time: 10-12 minutes

Ingredients

2 tablespoons oil
450g/ 16 oz aubergines -finger strips
1 red onion sliced
1 red chilli-thin stripped
1 green chilli -thin strips
1 clove garlic-thinly sliced
1 teaspoon thin stripped ginger
5 spring onions- stripped
1 tablespoon light soy sauce
1 tablespoon brown sugar
1 tablespoon hoi sin sauce/or plum
1 tablespoon rice wine vinegar
1 teaspoon dark soy sauce
season

Method

  • Heat up the oil in a wok
  • Stir-fry the Aubergine strips -till 1/2 cooked
  • Add the onions, chillies, ginger and garlic -fry for a few minutes
  • Add the spring onions, and all the sauces/rest of the ingredients
  • Stir fry till the aubergines are soft -2-3 minutes
