Baked Beans - Home Made Beans in Tomato Sauce
I use cannelloni beans for this but tinned baked beans are made from Navy beans - of course you could experiment with a variety of different beans.
Ingredients
1 tablespoon olive oil
1 small onion - finely chopped
1 teaspoon sugar - caster or light brown
1 teaspoon vinegar malt or red wine
1 tin cannelloni or haricot beans - drained and washed
1 tin plum tomatoes - chopped
2 - 3 tablespoons water
few twists black pepper
salt - optional
1 tablespoon tomato puree
Method
- Heat the oil in a large frying pan
- Sauté the onion until soft but not browned
- Add the sugar, vinegar and beans
- Stir to warm through for a minute
- Add the tomatoes and juice plus the water
- Simmer for a 5 - 6 minutes to allow all the flavours to blend and the dish to heat through
- Stir in the puree to thicken
- Cook for a further minute
- Season to taste and serve
