Chocolate Cake - Vegan with NO Eggs

A simple to make cake with the added bonus of containing no eggs or dairy so an ideal treat for a vegan.

Preparation time: 15 minutes   Quantity: Serves 8   Cooking time: 40 - 50 minutes

Ingredients

300 g / 10 oz self raising wholemeal flour
3 teaspoons baking powder
60 g / 2 oz cocoa powder
220 g / 8 oz caster sugar
8 tablespoons vegetable oil
350 ml water (just over 1/2 pint)
vanilla essence (1/2 tsp fresh essence or 2 tsp essence flavour)

Method

  • Sift the flour, baking powder and cocoa twice, adding all the left over wholemeal bits to the mix
  • Beat or whisk the oil and water in to the mix to create a smooth batter
  • Spoon in to a greased cake tin approx. 8 inch
  • Bake in a preheated oven gas 4 / 180*c / 350* f - for 40 - 50 minutes or until cooked (see facts and tips - info section)
