Lobster Thermadore
Preparation time: 10-15 minutes Quantity: Serves 2 Cooking time: 20-25 minutes
Ingredients
1 cooked lobster -medium -dressed
30g/ 1 oz butter
1 small onion -finely diced
400 ml fish stock
45 ml dry sherry or marsala
80 ml double cream
1/2 teaspoon Coleman’s English mustard
1 teaspoon chives -chopped
1/2 lemon juice
seasoning
30g/ 1 oz parmesan cheese -grated
Method
- Place the 2 lobster halves on a tray, but loosen the meat from the shell
- Melt the butter, add the onions cook till soft
- Add the stock and reduce to a quarter of the volume (boil till 3/4 of the water boils away and the sauce thickens)
- Add the sherry, mustard and cream and boil till thickened
- Squeeze in the lemon juice, season, taste - simmer for another minute
- Spoon on to the 2 halves of lobster
- Sprinkle with the cheese
- Grill under a preheated grill till golden and bubbly (3-5 minutes)
