Parmentiere Potatoes

Traditional parmentier potatoes are deep fried, but I prefer this healthier version.
These are a quick potato dish and very popular with children.

Preparation time: 10 minutes   Quantity: Serves 4   Cooking time: 25 - 35 minutes

Ingredients

450g/1lb potatoes
2 tablespoons olive oil
seasoning

Method

  • Peel the potatoes, trim the sides to make a rough rectangle, then cut in to even sized, medium dices - approx 1-2cm
  • Drizzle with the olive oil
  • Season and spread out on a baking dish
  • Roast for 25-35 minutes till soft and golden
