Parmentiere Potatoes
Traditional parmentier potatoes are deep fried, but I prefer this healthier version.
These are a quick potato dish and very popular with children.
Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 25 - 35 minutes
Ingredients
450g/1lb potatoes
2 tablespoons olive oil
seasoning
Method
- Peel the potatoes, trim the sides to make a rough rectangle, then cut in to even sized, medium dices - approx 1-2cm
- Drizzle with the olive oil
- Season and spread out on a baking dish
- Roast for 25-35 minutes till soft and golden
