Pate a Bombe or Parfait
This looks fantastic in different moulds; try a bomb/round mould, but you could use anything with a good shape like a tin or a flower pot.
Preparation time: 15 minutes plus freezing time Quantity: Serves 8
Ingredients
5 oz /130g sugar
10 egg yolks
¼ litre /1/2 pint whipping cream
Method
- Place sugar in a pan – add just enough water to cover and boil till 120c/soft ball (clear sticky caramel with no colour but thickened)
- Whisk – egg yolks till pale and frothy 3-4 minutes
- Pour in the sugar mix slowly in a fine stream whisking the eggs as you pour.
- Fold in gently whipping cream- whipped up
Add flavour – examples –
Cream de menthe –add 2 measures
Coffee- add 2-3 tablespoons espresso coffee
Pistachio –add 3 tablespoons crushed pistachios
Coconut –add 3 - 4 tablespoons toasted coconut etc. etc.
