Jerusalem Artichokes and Gruyere Bake
Jerusalem Artichokes have got an absolutely amazing flavour and work so well with cream and a rich cheese.
Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 30 minutes
Ingredients
2 lb/1 kilo Jerusalem artichokes, washed peeled and sliced
1/2 pint/ 10 fl oz double cream
juice of 1 lemon
2 cloves garlic crushed
5 sliced spring onions
4 oz/ 100g grated gruyere cheese
4 oz/ 100g breadcrumbs
2 tablespoons chopped flat parsley
1 oz/ 30g butter

Method
- Place the artichoke slices neatly in an ovenproof dish
- Squeeze on the lemon juice
- Whisk together the cream, till lighter and frothy but not whipped up
- Add the garlic, parsley, cheese, spring onions, seasoning and 1/2 the crumbs
- Pour over the artichokes
- Sprinkle on the rest of the crumbs
- Break on pieces of butter- roughly on top
- Bake in a pre-heated oven for 30/40 minutes
- Stick a knife in the artichokes should be soft and the top golden brown
