Banana Soufflé - Milk based
This is a basic milk based soufflé recipe, so you can adapt it too any flavour you choose. for fruit based soufflé see other recipe.
Serve this soufflé with toffee sauce.
Preparation time: 30 minutes Quantity: Serves 4 Cooking time: 12-15 minutes
Ingredients
30g /1 oz plain flour
60g/2 oz soft butter
1/2 pint full fat milk
60g/2 oz caster sugar
2 egg yolks
2 egg whites
2 ripe bananas -small dice.
1 tablespoon rum (op)
Method
- Mix the butter and flour together to form a soft dough (this is called a Beurre Mania)
- Boil the milk with the sugar and then whisk in the Beurre mania- stir till thickened
- Take of the heat -cool slightly
whisk the egg whites to soft peeks
- Whisk the egg yolks in to the milk mix
- Gently stir in the egg whites, careful not to loose the air
- Stir in the banana and rum
spoon in to greased and sugared ramekins or suitable ovenproof individual dishes
- Bake in a preheated oven gas 5-6/200*c/400*f - for 12 minutes or so till risen and firm, but wobbly to the touch
