White Wine Sabayon
Sabayon is a French warm whipped egg and alcohol sauce, total delicious.
You can use any alcohol you like- try champagne. Try pouring over a plate of exotic fruits and grilling to a golden brown.
Preparation time: 5 minutes Quantity: Serves 6-8 Cooking time: 5-10 minutes
Ingredients
4 large egg yolks
75g/ 3 oz caster sugar
150 ml /5 fl oz dry white wine
Method
- Whisk the sugar and egg yolks over a Bain Marie/ place in a bowl over a pan of
simmering water
- Whisk constantly till the eggs are paler, frothy and increased in size
- Whisk in the alcohol and water and whisk till light and aerated
