Petit Pois a la Francaise
Preparation time: 5 minutes Quantity: Serves 4 Cooking time: 10 minutes
Ingredients
1 teaspoon olive oil
50g/ 2 oz butter
6 spring onions- stripped
2 little gem lettuce- shredded
300g/ 16 oz petit pois/ fresh or frozen
200ml /6 fl oz chicken or vegetable stock
Method
- Pan fry the spring onions in the butter and oil, till soft
- Add the lettuce-cook for a minute
- Add the peas and stock
- Boil for 4-5 minutes, till all is cooked and the stock slightly reduced
- Season to taste
- Serve
