Petit Pois a la Francaise

A French Pea classic, fantastic as an alternative vegetable to accompany the Sunday roast.

Preparation time: 5 minutes   Quantity: Serves 4   Cooking time: 10 minutes

Ingredients

1 teaspoon olive oil
50g/ 2 oz butter
6 spring onions- stripped
2 little gem lettuce- shredded
300g/ 16 oz petit pois/ fresh or frozen
200ml /6 fl oz chicken or vegetable stock

Method

  • Pan fry the spring onions in the butter and oil, till soft
  • Add the lettuce-cook for a minute
  • Add the peas and stock
  • Boil for 4-5 minutes, till all is cooked and the stock slightly reduced
  • Season to taste
  • Serve
