Praline - Caramelized Almond Slab
Praline can be used in many ways - broken in to pieces as a garnish, pounded to a powder and used as a flavouring or sprinkled on to a plate for decoration, loosely crushed and sprinkled over ice-cream or added to desserts. Praline also makes a good ice-cream.
Preparation time: 3 minutes Quantity: makes a 8 oz mix Cooking time: 8 - 10 minutes
Ingredients
100 g / 4 oz sugar
100 g / 4 oz whole shell on almonds
Method
- Add both the ingredients together in a thick bottomed pan
- Cook over a medium heat until the sugar caramelizes
- Shake the caramel round the pan so all the sugar turns at the same time
- Cook to a deep golden colour
- Remove from the heat
- Pour on to a greases heat proof surface or tin lined with greaseproof paper
- Allow to cool
- Break of pieces as needed
