Mayonnaise
A classic loved the World over - use as a dip, mix with herbs, citrus, garlic or relishes for a tasty sauce. Use as a base for Aoli or use in CookeryClubs Prawn Balls - but if your watching calories use Greek Yogurt.
Preparation time: 30 minutes Quantity: Approx. 1/2 pint Cooking time: No cooking required
Ingredients
4 large organic egg yolks
1 - 2 teaspoons lemon juice
1 level teaspoon Colemans mustard
pinch salt
1/2 pint / 300 ml good oil - light olive oil / rapeseed / sunflower
touch cold water
pepper to taste
Method
- Whisk by hand or machine the yolks, juice, mustard and salt
- Carry on whisking - while adding the oil in a steady, thin stream
- ----- but whisking ALL the time, until all the oil has gone and the mixture smooth
- Add a touch of water, this will thin out if needed but also lighten the mix
- Season to taste
Tip - while whisking in the oil, if the mix starts to separate - stop pouring the oil and beat really fast until smooth again
