Indonesian Chicken
The flavours of the orient are just so interesting- this dish suits steamed rice and a simple lime dressed salad on the side.
Preparation time: 15 minutes Quantity: Serves 4 Cooking time: 30 minutes
Ingredients
450g diced chicken breast
1/2-1 chopped red chilli
1/2 fresh lemon juice
2 cloves crushed garlic
1 tablespoon dark soy sauce
1 tablespoon peanut oil/sunflower
2 teaspoons sunflower oil
1/2 pint chicken stock (or use 1/2 cube)
3 tablespoons smooth peanut butter
1 tablespoon honey
250g cooked French beans
5 spring onions sliced
1 tablespoons crushed peanuts
1 tablespoon chopped coriander leaf
Method
- Marinate the chicken for 20 minutes minimum in the chilli, lemon, garlic ,peanut oil and soy
- Heat up the oil and stir fry the chicken, (reserve the marinade), till golden brown
- Add the chicken stock, peanut butter, any left over marinade and honey
- Cook and stir 10-15 minutes, until slightly thickened and the chicken firm
- Mix in the chopped green beans
- Serve with the nuts and coriander sprinkled on top
