Cashew Nut Crumbed Pork
A crunchy little number, perfect served with garlic roasted new potatoes and some lemon dressed leaves or go Asian with some wok fried sesame noodles.
Preparation time: 20 minutes Quantity: Serves 4 Cooking time: 15 minutes
Ingredients
4 pork fillet portions - 5-6 oz each
2-3 tablespoons any flour
1 egg and a touch of milk
60g/ 2 oz cashew nuts
60g/ 2 oz breadcrumbs
seasoning
oil to fry
Method
- Batter out the pork fillets to make thin escallops
- In one bowl place the flour
- In another bowl place the beaten egg and milk
- For the third bowl lightly whizz/process the nuts and mix with the crumbs, season
- First dip the pork in the flour, followed by the egg (shake of excess egg mix), then dip in the crumbs, pat the crumbs in to the pork
- Fry the pieces in hot oil till golden on both sides, turning the heat down when browned to ensure though cooking for the last 5 minutes
