African Style Sausages-Mutton or pork, Curried with Sweet Apricots and Almonds

Preparation time: 1 hour Quantity: Makes 10 -12 portions Cooking time: 10 - 15 minutes
Ingredients
2 tablespoons olive oil
1 finely diced white onion
1 clove crushed garlic
2 teaspoons curry paste
1-teaspoon ground ginger
500g minced pork or mutton
40g ground almonds
40g finely chopped dried apricots
1 strip finely chopped lemon peel
50g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper
Method
- If using mutton double mince and marinate in 1 cup beer overnight, to tenderise
- Heat up the oil and cook the onions gently to softer without colour
- Add the garlic, followed by the curry paste and ginger - stir for a minute or two to release the flavours
- Cool
- Add to the mince pork or mutton and mix in with your clean hands
- Add all else and leave to infuse the flavour for at least 20 minutes or overnight
- Stuff in to soaked sausage skins- see chocolate sausages
