Chicken Stuffed with Cream Cheese

This is a basic stuffed chicken recipe, try wrapping in Parma ham or bacon or stuff with different cheeses or fruits or add herbs to cream cheese -the worlds your oyster- well you could stuff with oysters as well and a light truffle oil cream sauce!
Preparation time: 10 minutes Quantity: Serves 1 Cooking time: 22 - 27 minutes
Ingredients
1 chicken breast per portion with the fillet intact
1 - 2 teaspoons seasoned cream cheese
olive oil (and butter - optional)
Variations - add a teaspoon of fresh chopped herbs to the cheese or crushed garlic or fresh chopped chilli etc
Method
- Remove the fillet and batter out till double in size
- Insert a knife into each side of the breast making it bigger but with out going through the skin
- Stuff/insert seasoned cream cheese, tuck in the fillet
- Fry each side in hot olive oil (and butter)for 2-3 minutes until lightly browned
- Place in an ovenproof serving dish
- Bake in an oven gas 6-7 210*c / 420*f for 20 –25 minutes
